@marthastewart : The perfect treat for Easter weekend, courtesy of our culinary director @tojo827 - 🥕carrot cupcakes with brown butter + toasted coconut + dates (plus a lot of other good stuff). 🍰 Grab a screenshot + save the recipe, and share with your friends! 🙋🏻‍♀️ 📋: whisk together -> 2 cups AP flour + 1 1/2 cups sugar + 1 1/2 tsp cinnamon + 1/4 tsp freshly ground black pepper + 1/2 tsp coarse salt + 1 1/2 tsp baking soda -> add 2 sticks butter (melted, browned and cooled) + 3 large eggs + 3 cups grated carrots + 8 large dates (pitted and chopped) + 1 heaping cup walnuts (toasted and crushed) + 1 cup sweetened coconut (toasted) + 1 20oz can pineapple chunks (drained and chopped) + 1 tbs vanilla extract -> divide between 2 12-cup muffin tins (with paper liners) -> bake at 350 degrees until dark golden brown and toothpick comes out clean (about 24-26 minutes) -> frost with 2 8oz blocks cream cheese + 1 stick butter + 2 2/3 cups confectioners sugar (sifted) + pinch of coarse salt + 2 tsp vanilla -> cream together until light and fluffy -> frost -> sprinkle -> serve
