@melissajoanhart : I love spending time with my family on the Fourth of July whether we’re playing games, hanging out on the lake, or snacking on our favorite dishes. This year, I’m teaming up with @HeluvaGoodDips for #DipRemixed celebrating remixed takes on chip & dip and other classic dishes. I remixed corn on the cob and created a street corn salad. My kids can’t get enough! What’s your favorite Fourth dish? #HeluvaGood #DipRemixed #ad . . . . . STREET CORN SALAD INGREDIENTS & STEPS 5 ears fresh corn (husked and kernelled) or 10 oz bag of frozen corn 1 ea Heluva Good! French Onion Dip 1 ea Lime Pinch chili powder or cayenne 1 tsp jalapeño, finely chopped 3 oz Cotija cheese 1/2 tsp kosher salt (Optional) 4 slices Bacon, cooked and crumbled Handful cilantro, chopped Handful Ruffles ridged potato chips 1. Cook bacon until crispy. Chop or crumble and set it aside 2. Heat a heavy bottomed pan or a cast iron skillet until it’s about to smoke 3. Blister the corn kernels until they blacken 4. Pour out cooked corn into a large working bowl 5. Add 3 TBSP or more of HvG! French Onion Dip, minced jalapeño, chili powder, salt, squeeze of 1 lime, 2 oz cotija cheese, chopped cilantro, crumbled bacon and mix until combined 5. Transfer into a serving bowl and top with leftover cotija cheese, chopped cilantro, chili powder, and crumpled ridged potato chips 6. Enjoy!
