Feel Good Ingredient: Dark leafy greens such as kale, spinach, mustard greens, Swiss chard and collard greens are full of energizing B vitamins and super low in calories. They have anti-aging properties due to their high vitamin K, folate, beta-carotene, and lutein content and do wonders for our brains, cells, cardiovascular health, and immune systems.
One of my favorite ways to eat them is to take 1 bunch, chop up the ribs and stems, and sauté them with some thinly sliced onion and garlic. When the onions are soft add the roughly chopped leaves. Once they’re wilted add a spoonful of balsamic vinegar and a spoonful of honey or maple syrup and toss. It’s like an Italian style sweet and sour aka agrodolce.
